Chickpea hummus is a Middle Eastern dish made with a cream based on chickpeas , tahini, paprika and lemon juice. You can easily prepare it for a quick appetizer to share with friends also using canned chickpeas.
INGREDIENTS
- 500 g of boiled and drained chickpeas
- the juice of 1 lemon
- 5 tablespoons extra virgin olive oil (plus more for the garnish)
- 1 clove of garlic
- 1 teaspoon of salt
- 6 tablespoons of tahini
- 1 tuft of coriander
- 1 pinch of paprika (plus one for the gasket)

Start preparing the chickpea hummus by draining the chickpeas. Meanwhile, weigh all the spices you will need for its preparation. Then weigh 400 g of chickpeas and set aside another 100.
Blend the 400 g of chickpeas together with the lemon juice, the oil, the peeled and cored garlic clove, the salt, the tahini and the paprika. Blend everything until you obtain a semi-dense mixture, smooth without lumps. Transfer it to a bowl and store it in the refrigerator until ready to use.
Before serving, garnish the chickpea hummus with the chickpeas kept aside, the coriander, a pinch of paprika and a drizzle of oil.
